Josh’s doctoral research on the microbiogeography of translated fermentation practices traces how microbes and humans may be changing each other in novel, flavour-oriented approaches to fermentation in leading restaurant kitchens and culinary R&D labs in Copenhagen, and what these changes might tell us about domestication processes in general. His broader research interests include biological individuality, agricultural history, and the biopolitics of land use.
